Pork chops and cocoa bread
It has been a couple of days since I shared my meals with
you. Hopefully I am not boring anyone,
but I guess if that is so, then that person won’t be reading very far into this
anyway. On Wednesday supper was again
from the French Women book, and it was excellent. We had pork chops baked in wine with cloves,
coleslaw and bread. We even tried a
“dessert” mentioned in the book. We
spread sour cream on thick bread, then dusted the cream with cocoa powder. At first I used too much cocoa and it tasted
dusty, but after scraping some off it was very good.
The next two nights were not so good. Thursday I ended up eating fast food for
lunch and dinner due to my job, and Friday night I had a peanut butter and
jelly sandwich at midnight. As much as I
enjoy and want to have home cooked meals every night, real life intrudes.
Today I cooked my favorite type of “I have no plan for
dinner” meal. I generally mix noodles,
whatever cheese I have, whatever meat I have and whatever sauce I have and
bake. Tonight I had whole-wheat elbows, a smidgen of shredded cheddar, more
shredded Swiss and some feta to use. I
boiled the noodles, added the cheeses, cooked sausage and added that, and used
about 1/3 of a bottle of Indian Tiki Masala sauce from the grocery store. I mix and bake about 15 minutes, and it
turned out very tasty. Lunch was simple,
after mowing the yard I reheated the last pork chop and the last of the soup
from earlier in the week. Many days my
favorite food is whatever is already cooked and waiting for me.
I hope this was interesting.
I would love to know what other folks are eating, you might give me some
ideas. Hopefully I have done the same.
Pork Chops with apples, from French Women don’t get Fat
Preheat the oven to 375.
Butter a baking pan and place the 4 pork chops in it.
Press a clove into each chop. Add the ½ cup dry white wine, 4 celery
leaves, and 2 bay leaves. Place in the
oven and bake chops for 30 minutes.
While pork chops are baking, in a frying pan sauté the diced
celery (4 stalks diced) in 1 tablespoon butter for 5 minutes. (I used onion instead). Add sliced apples and sprinkle with 1
tablespoon brown sugar. Cook over low
heat for 10 minutes or until apples are tender but not mushy.
Finish pork chops by removing bay and celery leaves and
sprinkling 4 ounces Swiss cheese coarsely grated on the chops and broil for a
few minutes.
